Red Phoenix Hot Sauce
The Red Phoenix is an experiment that worked out in all the right ways. It was made as a topper for a Korean Ek Chili that we made for a chili competition. The resulting sauce blew us away and we decided to bottle it.
The Korean Red Phoenix is one of the mythical guardians of the four directions. The Red Phoenix of the South represents summer and rebirth. In making this hot sauce we are holding onto summers embrace and transforming our bountiful harvests through fermentation to be reborn in a mythical combination of flavors. The fermented funkiness of Kimchi is combined with the stinging heat of fermented Death Spiral Peppers to take your mouth soaring into the sky.

Ingredients: Rice Vinegar, Kimchi (Napa Cabbage, Daikon Radish, Garlic, Green Onion, Onion, Red Chile Pepper, Cane Sugar, Sea Salt), Fermented Peppe Mash (Death Spiral Peppers, Garlic, Sea Salt), Honey
